Easy Summer Chicken Bake

1 cup sliced zucchini

1 cup sliced yellow squash

1 cup cubed mangoes (frozen is fine)

1/2 cup raisins

1 teaspoon paprika

2 teaspoons ginger

1 1/2 lbs lean chicken breasts

1 teaspoon olive oil

The Best Sour Cream Shredded Chicken Enchiladas

3-4 chicken breasts (depending on size)

8 ounces sour cream

1 (10 1/2 ounce) can cream of mushroom soup or cream of chicken soup

1 (4 ounce) can diced green chilies

1 small onion (diced)

1 cup cheddar cheese (shredded, for filling mixture)

1 cup cheddar cheese (shredded, for topping)

12 corn tortillas

vegetable oil (for frying)

Wild Rice Baked Chicken

2/3 cup uncooked wild rice

4 celery ribs, sliced (2 cups)

1 medium green bell pepper, diced (1 cup)

2 green onions, chopped

1 1/4 cups water

2 teaspoons chicken bouillon granules

1/2 teaspoon garlic powder

2 whole chicken breasts, halved and skinned

soy sauce

These are easy to make food with low carbohydrates that also taste great.
