Some low carb recipes you can try for breakfast

Here are some low carb recipes for breakfast:

Sausage and Egg Breakfast Cups

4 oz. turkey sausage or crumbled turkey bacon

1/2 green bell pepper, chopped

1/4 onion, chopped

5 large eggs (or 1 1/4 cups egg substitute)

1/2 cup shredded low-fat cheddar cheese

1. Preheat oven to 325.

2. Coat a 6 cup non-stick muffin pan with cooking spray or line with paper baking cups.

3. In a medium non-stick skillet, cook the sausage, peppers, and onions for 5 minutes, or until sausage is no longer pink.

4. Spoon mixture and cool slightly.

5. Stir in eggs or egg substitute.

6. Evenly divide mixture into 6 muffin cups; Sprinkle with cheese.

7. Bake for 20 minutes, or until egg is set.

Eggs Benedict

4 eggs

Canadian Bacon

Sauce

1/2 cup butter

3 beaten egg yolks

1 Tablespoon water

1 Tablespoon lemon juice

1. Lightly grease skillet and fill skillet half way with water.

2. Bring water to boiling. Reduce heat and simmer.

3. Break eggs into cup and carefully slide one at a time into water. Allow space for each egg.

4. Simmer for 5 minutes. Meanwhile, heat Canadian Bacon in skillet.

5. Remove poached egg and serve with Canadian Bacon and Hollandaise Sauce.

6. For sauce, combine butter, egg yolks, water and lemon juice. Heat in a double boiler, stirring constantly.

Low Carb Recipes for Lunch

Here are some low carb recipes for lunch:

Ham and Cheese Rollup

1 whole wheat low carb tortilla

1 ounce lean ham

1 ounce Provolone cheese

1. Place tortilla on the toaster tray and top with ham and cheese.

2. Toast on medium or until cheese is lightly melted.

3. Remove from toaster oven, fold in half and enjoy.

Sour Cream Chicken Salad

1 Tablespoon finely chopped parsley

1/2 teaspoon lemon zest

3 minced scallions

3/4 cup low fat sour cream

Salt and pepper to taste

3 cups shredded cooked chicken breast

8 large lettuce leaves

1. In a medium bowl, combine sour cream, scallions, parsley, zest, salt and pepper. Toss to blend.

2. Add chicken; toss to coat.

3. Serve on a bed of lettuce leaves.

Low Carb Recipes for Dinner

Here are a couple of low carb recipes you can prepare for dinner:

Chicken Cordon Bleu - (This is for Phase 2 of the South Beach diet.)

4 skinless, boneless chicken breasts

8 thin slices of ham

4 oz. Swiss or Bleu cheese

1 Tablespoon melted butter

1 large egg, beaten

3/4 cup Parmesan cheese

1. Pound chicken breasts to 1/3" thickness.

2. Place ham on breasts, then add 1/2 ounce of the cheese.

3. Roll up and secure with a toothpick.

4. Combine the melted butter and beaten egg.

5. Dip each breast-roll into butter and egg mixture.

6. Roll in Parmesan cheese and place in a greased 9x13 baking dish.

7. Bake at 350 for 30-35 minutes or until browned and tender.

Savory Chicken Saute - (This is for Phase 3 of the South Beach diet.)

2 skinless, boneless chicken breast halves

2 Tablespoons extra-virgin olive oil

1/2 large onion, sliced

1 minced garlic clove

1/2 Tablespoon fresh rosemary leaves, chopped

1/4 cup fat-free chicken broth

Pinch of salt

Pinch of freshly ground black pepper

1. Heat the oil in a large skillet over medium heat.

2. Saute chicken breasts in the oil for 4 minutes on each side, then add the onion.

3. Cover and cook for 3 minutes longer, stirring occasionally.

4. Add the garlic, rosemary and broth. Cover and cook until the onion is crisp (about 5 minutes longer) stirring occasionally.
